Garlic mashed potatoes

Ingredients

  • 3 ½ pounds of russet potatoes
  • 16 ounces (2 cups) half-and-half*
  • 6 cloves of crushed garlic
  • 6 ounces of grated Parmesan
  • Kosher salt to taste

Directions

1. Peel and dice the potatoes.

2. Place them in a large saucepan and add salt before covering them with water.

3. Bring to a boil over a medium-high heat.

4. Reduce the heat to maintain a steady boil.

5. Cook until potatoes fall apart when poked with a fork.

6. Heat the half-and-half and garlic in a separate saucepan over medium heat until simmering.  Remove from the heat and set aside.

7. Remove potatoes from heat and drain the water.

8. Mash the potatoes and then add the garlic-cream mixture and the Parmesan.

9. Stir all of the ingredients together.

10. Let stand for 5 minutes before serving so the mixture can thicken.

*or the equivalent 2 cups of milk with two tablespoons of melted butter mixed in.
