Orange cranberry bread

Ingredients
- 1 tablespoon of orange zest
- ½ cup of fresh orange juice
- 2 ½ cups of all-purpose flour
- 1 cup of sugar
- 2 teaspoons of baking powder
- ½ teaspoon of baking soda
- ½ teaspoon of salt
- 2 large eggs
- 4 tablespoons of melted butter
- 2 cups of fresh (or frozen) cranberries
- 1 cup of chopped walnuts (optional)
Directions
1. Preheat your oven to 375 degrees F.
2. Grease a 9 x 5 inch loaf pan and set it aside.
3. Mix the flour, sugar, baking powder, baking soda and salt.
4. In a separate bowl, whisk the eggs and then stir in the melted butter, orange peel and orange juice.
5. Combine the two mixtures and stir until completely combined.
6. Add the cranberries and walnuts.
7. Pour the batter into the pan and bake for 55-60 minutes or until a toothpick inserted into the centre comes out clean.
