Turkey Chilaquiles

Thanksgiving leftovers

Ingredients

  • 2 tablespoons of vegetable oil
  • 1 ½ cups of chopped red onions
  • 1 (4 ounce) can of diced green chiles
  • 1 (10 ounce) can of diced tomatoes and green chiles
  • 3 cups of leftover cooked turkey, shredded
  • 1 (16 ounce) jar of chunky salsa
  • Salt and ground black pepper
  • 5 cups of tortilla chips, crushed
  • 1 ½ cups of shredded Mexican 4 cheese blend
  • ¼ cup of cilantro leaves, chopped
  • ¼ cup of sour cream

Directions

1. Preheat your oven to 400 degrees F.

2. Heat the vegetable oil in a large oven-safe skillet over a medium-high heat.

3. Add the onions and sauté until soft.

4. Add the green chiles, diced tomatoes, leftover turkey and salsa.

5. Add salt and pepper to taste.

6. Top with tortilla chips and then the cheese.

7. Place the skillet in the oven and bake for 20 minutes.

8. Garnish with cilantro.
