Basic cupcake recipe
Ingredients:
- 110g/4oz of softened butter or margarine
- 110g/4oz of granulated sugar
- 2 large eggs
- 1 teaspoon of vanilla extract
- 110g/4oz of self-raising flour
- 1-2 tablespoons milk
Method:
1. Preheat the oven to 180C/350F/Gas mark 4 and place 12 muffin cases in a muffin tray.
2. Beat the butter and sugar in a bowl until pale and creamy, if you’re using an electric mixer it should take about 5 minutes on a medium-high speed.
3. Beat in the eggs one at a time and add 1/2 teaspoon of vanilla extract after beating in each egg.
4. Fold in the flour and add a bit of milk until the mixture is of a dropping consistency.
5. Carefully spoon the mixture into the paper cases until they are half full.
6. Bake for 10-15 minutes or until they are golden-brown on top and a toothpick inserted into the centre of the cupcakes comes out clean.
7. Cool the cupcakes for 10 minutes in the mufin tray and then remove them from the tin and place on a wire rack to cool.
