Pastry recipe
MAKES 1 9 in. pie crust
Ingredients
- 2 3/4 cups all-purpose flour, plus more for dusting
- 1 teaspoon of salt
- 1 teaspoon of sugar
- 12 tablespoons (or 1 1/2 sticks) of chilled unsalted butter, cut into small pieces
- 4 tablespoons of chilled vegetable shortening
- 6 to 10 tablespoons of ice water
Directions
1. Place the flour, salt, and sugar in a large bowl and whisk to combine.
2. Add the butter and shortening to the flour mixture. Using a pastry cutter or two table knives, combine the mixture until it resembles coarse meal.
3. Gradually add ice water, intermittently mixing with a large fork. Use just enough water so the dough holds together.
4. Turn the dough out onto a lightly floured work surface and divide it into two portions.
5. Place each portion on a sheet of plastic wrap. Grasping the ends of the plastic wrap with your hands, press the dough into a flat disc with your fists.
6. Wrap the portions in the plastic and chill for at least one hour.
