Roast parsnips

Christmas Dinner



  • 1 1/2 lbs of parsnips, peeled and julienned
  • 3 tablespoons of olive oil
  • 2 pinches of cayenne (to taste)
  • 1/4 teaspoon of sea salt  (to taste)
  • 2 cloves of minced garlic


1. Preheat oven to 450F/230C.

2. Layer the parsnips on a baking sheet in single layer.

3. Sprinkle with the olive oild, cayenne and salt, tossing well to ensure everything is fully coated.

4. Roast for 15 minutes on the bottom rack, stirring occasionally.

5. Sprinkle with the garlic and roast until well browned, about 15 minutes longer.

6. Let cool slightly and add more salt if necessary.
