Turkey, brie and apple sandwiches

Ingredients
- 8 slices of bread (about ½ inch thick)
- 5 to 6 tablespoons of unsalted butter
- ¼ cup of store-bought apple butter
- 1 pound of turkey
- ½ pound of brie cheese, thickly sliced
- 1 bunch of arugula with the stems trimmed
Directions
1. Spread 4 slices of the bread with ½ tablespoon of butter.
2. Then spread each with 1 tablespoon of apple butter.
3. Top each slice of bread with a few pieces of turkey and 2 to 3 slices of brie.
4. Put 2 to 3 arugula leaves on top.
5. Spread the remaining 4 slices of bread with ½ tablespoon of butter and lay them buttered sides down over the cheese. Press down gently.
6. Heat a large skillet over a medium to low heat.
7. Add 1 tablespoon of butter to the skillet and let it melt so that it coats the bottom of the pan.
8. Cook each sandwich for 2 to 3 minutes (the bread should be golden brown and the cheese should begin to melt).
9. Flip and cook for 2 to 3 more minutes.
