Turkey pot pie
PREP TIME 20 min
COOK TIME 50 min (stovetop and oven)
Ingredients
- 2 tablespoons of butter
- 1 chopped onion
- 2 chopped celery sticks
- 3 chopped carrots
- 4 tablespoons of flour
- 4 cups of chicken or turkey stock
- 2 peeled and diced potatoes
- 2 tablespoons of chopped parsley
- ½ cup of frozen peas, already thawed
- 2 cups of cubed/shredded cooked turkey
- 1 prepared pie crust
- 1 lightly beaten egg
Directions
1. Preheat your oven to 350 F.
2. Melt the butter in a saucepan and cook the chopped onion until it is tender.
3. Stir in celery and cook for 2 minutes.
4. Stir in flour and cook for another 2 minutes.
5. Add chicken or turkey stock and bring all of the ingredients to a simmer.
6. Add potatoes and simmer until they are tender.
7. Stir in the turkey, parsley and peas.
8. Once fully cooked, pour the mixture into a casserole dish and top with the prepared pie crust.
9. Brush the pie crust with the beaten egg.
10. Bake for 30 min or until the crust is golden brown.
