Vegan Pancakes

Ingredients:

  • 1 banana
  • 1 1/4 cups fortified soymilk or rice milk
  • 1 tablespoon maple syrup
  • 1 cup whole wheat pastry flour or whole wheat flour
  • 2 teaspoons sodium-free baking powder
  • 1/4 teaspoon salt
  • fresh fruit, maple syrup or whatever meets your fancy for serving

Method:
1. Mash the banana in a large bowl and then stir in the milk and maple syrup.
2. In a separate bowl mix the flour, baking powder, and salt.
3. Combine with the banana mixture and stir until it is one smooth mixture.
4. Pour small amounts of batter onto a preheated non-stick, lightly oil-sprayed griddle, skillet or frying pan. When the top begins to bubble, flip the pancake with a spatula and cook second side until golden brown, if necessary or just for the fun of it you can flip the pancake again.
5. Just keep repeating step 4 until all of the batter is gone, you should end up with about 24 pancakes depending on how big or small you make them, but that’s completely up to you.

You can enjoy these pancakes plain or with any topping you like and you can even eat them as a snack. And might we suggest ladies that you gently show your partner this recipe as a hint for breakfast in bed, after all you’re pregnant you deserve it!
