Zucchini bread

Thanksgiving Desserts

Ingredients

  • 2 cups of shredded raw zucchini
  • 3 eggs
  • 1 ¾ cups of sugar
  • 1 cup of vegetable oil
  • 2 cups of flour
  • ¼ teaspoon of baking powder
  • 2 teaspoons of baking soda
  • 2 teaspoons of cinnamon
  • 1 teaspoon of salt
  • 2 teaspoons of vanilla
  • 1 cup of chopped walnuts

Directions

1. Preheat your oven to 350 degrees F.

2. Put the zucchini in a strainer and squeeze the excess water out.

3. In a bowl mix the eggs, sugar and oil together.

4. Stir in the flour, baking powder, baking soda, cinnamon, salt, vanilla and walnuts.

5. Add the zucchini and mix well.

6. Pour into 2 greased and floured 8 ½ x 4 ½ inch loaf pans.

7. Bake for 55-60 minutes or until a toothpick inserted into the centre comes out clean.
