Basic sugar cookie recipe

Delicious Easter sugar cookies

An easy, basic sugar cookie recipe always comes in handy, especially at holiday time when you want the perfect cookie for cutting into festive shapes and decorating with frosting and other fun treats. This recipe is the perfect solution. It’s easy, fun and simple!

Ingredients:

  • 4 cups of sifted all-purpose flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 8 ounces (2 sticks) of softened, unsalted butter
  • 2 cups of sugar
  • 2 large eggs
  • 2 teaspoons of vanilla extract
  • 2 tablespoons of cocoa powder for chocolate sugar cookies

Method:

1. In a large bowl mix flour, baking powder and salt (and cocoa powder for chocolate sugar cookies).

2. In a separate bowl, beat the butter and sugar using an electric mixer on medium speed. Blend it for about 3 minutes or until the mixture is pale and fluffy.

3. Beat in eggs and vanilla alternately, that 1 egg followed by one teaspoon of vanilla.

4. Reduce the mixer to a low speed and gradually mix in the dry mixture from step 1 until you have a nice cookie dough mixture.

5. Flatten the cookie dough into a disk and wrap it in plastic for refigeration. Refrigerate until firm, at least one hour.

6. Preheat oven to 325°F/160°C/Gas mark 3, ensure the racks are in upper part of your oven.

7. Bring dough down to rrom temperature so it is soft enough to roll out.

8. Roll out dough on a lightly floured surface so that it’s just under 1/4-inch thick. Add more flour if dough is sticky.

9. Place in the refrigerator again for approximately about 30 minutes.

10. The fun part! Cut your cookies into the festive shapes you want and place them on parchment-lined baking sheets. Remember to re-roll scraps so you don’t waste any dough.

11. Before baking, place your cut cookies in the freezer for about 15 minutes.

12. Finally, bake your cookies for between 15 and 18 minutes or until golden brown along the edges. Don’t forget to rotate the trays after 8 minutes, so all of the cookies are fully baked.

13. Cool the cookies on wire racks.

14. When completely cool, it’s time to decorate!
