Extra-veggie frittata

Ingredients
- 8 eggs
- 1 cup of milk
- Chopped parsley
- Salt
- Pepper
- ½ cup of stuffing bread cubes
- 2 cups of leftover cooked vegetables (broccoli or cauliflower)
- 2 tablespoons of olive oil
- Grated cheddar cheese
Directions
1. Beat the eggs, milk, parsley, salt and pepper together.
2. Add the stuffing bread cubes and vegetables.
3. Heat the olive oil in an ovenproof 10-inch nonstick skillet over a medium-high heat.
4. Add the egg mixture to the olive oil and cook for 2 minutes.
5. Reduce heat to medium-low and top everything with grated cheddar, cook for 10 more minutes.
6. Broil for 3 minutes, slice and serve.
