Roasted baby carrots

Ingredients:

  • 1 1/2 lbs of 5 in. long baby carrots, washed and dried with the greens cropped 1 in. above the top of the carrot
  • 1 medium red onion, peeled, cut into 8-12 wedges
  • 2 Tbsp of olive oil
  • 1 Tbsp of fresh chopped rosemary or 1 teaspoon of dried rosemary
  • Garlic powder
  • Salt
  • Freshly ground black pepper

Method:

1 Preheat the oven to 400°F/200C.

2. Gently toss the carrots, red onion, rosemary togther and coat with the olive oil.

3. Lay out on a rimmed baking pan, lined with aluminum foil and sprinkle with the garlic powder, salt, and pepper.

2 Roast for 30 to 40 minutes on the middle or bottom rack, until well browned.
