Stuffing balls

Ingredients:

  • 1 cup of chopped onions
  • 4 tablespoons of butter
  • 1/2 cup of chopped celery
  • 6 cups of dry bread cubes
  • 2 cups of low sodium chicken broth or water
  • 2 slightly beaten eggs
  • 4 tablespoons of dried parsley flakes
  • 4 teaspoons of dried sage
  • 2 teaspoons of dried poultry seasoning
  • 1/2 teaspoon of freshly cracked black pepper
  • 1 teaspoon of freshly grated nutmeg
  • Melted butter
  • Sage leaves for garnishing

Method:

1. Preheat your oven to 375F/190C. Melt the butter in a large skillet over a medium heat.

2. Add the onions and saute for approximately 5 minutes.

3. Add the celery and continue cooking until softened. Remove the from the heat.

4. Add the beaten eggs to the broth or water and blend well.

5. Add the parsley, sage, poultry seasoning, pepper and nutmeg, mix well and pour over the dry bread cubes and stir.

6. Shape the mixture into 2-inch balls and place on a greased cookie sheet.

7. Drizzle a small amount of melted butter over the balls.

8. Bake uncovered for 20 minutes or until the outsides of the balls are crispy.
