Garlic mashed potatoes

Ingredients
- 3 ½ pounds of russet potatoes
- 16 ounces (2 cups) half-and-half*
- 6 cloves of crushed garlic
- 6 ounces of grated Parmesan
- Kosher salt to taste
Directions
1. Peel and dice the potatoes.
2. Place them in a large saucepan and add salt before covering them with water.
3. Bring to a boil over a medium-high heat.
4. Reduce the heat to maintain a steady boil.
5. Cook until potatoes fall apart when poked with a fork.
6. Heat the half-and-half and garlic in a separate saucepan over medium heat until simmering. Â Remove from the heat and set aside.
7. Remove potatoes from heat and drain the water.
8. Mash the potatoes and then add the garlic-cream mixture and the Parmesan.
9. Stir all of the ingredients together.
10. Let stand for 5 minutes before serving so the mixture can thicken.
